Now, on to the good stuff!
No-Bake Bourbon Balls
2 1/2 cups finely crushed vanilla wafers
1 cup confectioners’ sugar (sifted)
2 tablespoons cocoa
1/2 cup chopped nuts (our chef prefers pecans)
1/2 cup shredded coconut
4 tablespoons of light corn syrup
1/4 cup bourbon (our chef prefers Wild Turkey for better flavor)
1. Mix crushed wafers, sugar, cocoa, nuts, and coconut well in a large bowl.
2. Add in corn syrup and bourbon and mix well.
*The mixture will appear to be very dry, but work the dry ingredients in, and do not add in any additional liquid.
3. Form into balls and roll in confectioners’ sugar.
4. Store in glass airtight container in fridge.
These are best when eaten at room temperature with a hot drink, like coffee.
