Who Was our January Winner?

Let’s get down to the good stuff… the recipe!

Raw Noodle Kugel

Ingredients:
1 stick melted butter
8 oz. Medium uncooked noodles
3 eggs
1 tsp vanilla
1 can crushed pineapple- with juice, 16 oz. can
1 lb cottage cheese lite
2 cups low fat or skim milk
1/2 cups orange juice
1/2 cups sugar
1/2 cup raisins

Directions:
Mix all the ingredients together in a large bowl.
Grease a 10x12x2 Pyrex pan – or use an aluminum pan.
Pour mixture into pan, and let it stand 2 hours, where the noodles can soak up the liquids (or let it refrigerate it overnight).
Preheat oven 350 degrees, and bake for 1 hour.
Serve warm.

About our Chef of the Month: 

Ann is a retired school teacher, who currently works part time at a preschool floater and art teacher. She was a middle school art teacher in California for 18 years, and in Colorado for 3 1/2 years. Following that Ann worked as a para educator for 11 years with special needs students at an elementary school. When she’s not teaching kids, Ann loves to enjoy arts and crafts, and trying new recipes!
